This weekend, I was able to bake Mrs. Pilant’s famous chocolate chip banana bread. From making it for her advisory to bringing it for yearbook breakfast, everyone is always trying to get their hands on a slice. If you haven’t had the chance to try her banana bread, I highly recommend making this very simple yet delicious treat. The prep and bake time is just a little under an hour, perfect for making for breakfast, or anytime really. This weekend when I made it, it was very easy to execute a perfectly baked loaf with the directions that Mrs. Pilant gave me. The recipe can be found below.

First, Preheat the oven to 350 degrees.

  • Ingredients:
    • Start with your dry ingredients first and use either a mixing bowl or electric mixer.
    • 2 1/2 cups of flour
    • 1 1/4 cups of granulated sugar
    • 1/2 teaspoon of salt
    • 1 teaspoon of baking soda
    • 2 eggs
    • 1 1/2 teaspoon of vanilla
    • 1/2 cup of milk
    • 1 stick of melted butter
  • Blend all ingredients, and then add two very ripe mashed bananas. Mix on high speed for 30 seconds then add about two handfuls of semi-sweet chocolate chips for 10 – 15 seconds.
  • Pour into a greased loaf pan and bake for about 30 to 40 minutes.
